So last night I picked up a keg from a new local brewery. Get there and it's a corny keg that has had the fittings welded shut and a sanke adapter welded to the lid.

I thought I could make it fit in my kegerator but by the time I put the sanke adapter on its just too tall to fit. I already cracked the keg at this point and served a few beers off of it while it was cold (delicious by the way and couldn't wait haha)

I didn't know what to do after so I asked a buddy. And did what he said which was pressurize the keg to 30psi then pull the release a few times to get rid of oxygen. Then after that cut the 30psi and unhook everything and I put it back in the fridge with nothing attached. Is this going to store fine? I'm thinking of transferring it to a regular ball lock corny keg so it fits in my fridge. Can I do this?

It should store fine for a while.

Yes, you can do as you plan. Going from sanke to liquid line on your ball lock corny with a pre-purged corny, and pushing with co2, ought you net you great results.
 
OK I was just worried the 30psi would be overcarbing it right now.
 
If all you did was fill the headspace of the keg with 30 psi, you're fine. It takes constant pressure and time in order to add carbonation to the beer. One blast of 30 psi to the headspace is nothing to worry about.
