Ok, so here is what I did.
I put about 16 frozen AJC to my bucket, filled to about 4.5 gallons.
OG 1.056
Red star pasteaur champagne yeast.
Two weeks in and it at 1.000. It's surprisingly clear and very dry.
It came out alot lighter than I thought it would, it's yellowish.
Any ideas on what to do now?
Just curious to hear anyones ideas.
 
more seriously, you could bottle it now, you could also backsweeten before you bottle and pasteurize after bottling if you wanted a sweeter cider, or you could even prime with 1 cup of sugar per 5 gallons of cider and then bottle if you wanted it sparkling
