Off for the next 2 days, brewing tomorrow....I'm getting smashed tonight baby!

I just got off of work, gotta catch up....I'm gonna start with a nice 2005 Alaskan Smoked Porter that the_bird was so nice to send me.

I've been looking forward to trying this beer for a VERY long time.

Here goes!

Holy buckets. This Alaskan Smoked Porter is quite possibly one of the best beers I've ever had. It has bumped Loose Cannon from the Top 5 all time on the "Dude list".

1. Hop Rod Rye
2. Sierra Nevada Celebration Ale
3. Stone IPA
4. Guinness
5. Alaskan Smoked Porter

I've heard the '05 is a lot less overwhelmingly smokey than the '06; I need to crack my other bottle and see for myself. You aren't an especially big fan of Stone's Smoked Porter, are you (or are you?)

Yeah, the Alaskan smoked is awesome. Some have said it's a slight bit too smoky but I really liked it a lot! Wish I had one waiting for me at home when I got off work...:(

I am--I like it a lot. I dont' think it has enough smokiness though.

You know, as I poured the last 1/3 of this one--it is already losing its smoke. I know my palate is adjusting...but if i could make it better, I'd want more.

I need to do another smoked porter, VERY SOON. In fact, I think I'm going to do a 10 gallon batch and bring a corny to the NHC.

I made a smoked porter recently, but I f*cked up (so I didn't send it to you). Got too aggressive with the hops. Sometimes, I need to remember that not EVERY recipe needs flavor hops... :D It's drinkable, it's just a bit too hoppy, it takes away from the smoke and roast character.

So, that's definately on the re-brew list. I might try using regular ol' rauchmalt next time, although for brews that just call for a bit of aroma and not too much taste (like the Stone), I personally kind of *like* the peated malt. Think I used 2oz for a five-gallon batch.

If you want an absolutely knock your socks off smoked porter recipe, and you want to get away from the peated malt, let me know.

Send it to me. Next up is Resurrection 777, then more MITRB, then I'll need to hit something maltier for SWMBO.

Here is the recipe:

North To Alaska
Smoked Porter

7.5 lbs GW Pale 2-row smoked with alderwood
2.5 lbs Light Munich smoked with alderwood
1 lb Chocolate malt
.5 lb Crystal 60L
.5 lb Crystal 120L
.5 lb Black Patent
2 oz of Carafa ll at mash out for color
1 oz Chinook leaf 60 mins
1 oz Willamette leaf 20 mins
.5 oz Willamette leaf 5 mins
Whirlfloc tab at 5 mins
Wyeast #1007, 1056 or the Whitelabs equivalent's. Wyeast #1187 Ringwood is also a very nice choice

OG 1.065
FG 1.015

Single infusion at 152f for 60 mins...Batch sparge
Boil time 90 mins

I did this recipe, but with 5 lbs. of German rauch malt, because I didn't have the means to smoke my own at that time. If I did it again, I'd use 100% smoked base malt. The recipe comes from a guy on the green board who researched this for almost a year, got some top secret hot tips from the peeps at Alaskan Brewing, and tweaked it until he got it perfect. He won numerous awards with this one. He is prolly one of the best brewers around.

This is as close as it gets.

I hate linking to other forums, but there is so much good reading in this thread it is worth passing on, I think.
