I just brewed my second batch, a hefeweizen, and it has been aging/carbonating for 7 days now. I am pretty impatient and decided to try a few now instead of letting them age for a couple more weeks. They are carbonated nicely and the flavor is great.

However, on a couple of them, there is a spicy/bitter aftertaste that makes them almost undrinkable. Is this a problem I should worry about or will this go away with a couple ore weeks of aging when the flavors mellow?

They are probably just green give them a few more weeks and they should mellow.

I find hefewiezen usually very tart at first but they always mellow out after a couple weeks in the bottle.

I love Weizen, My first homebrew. You need to wait let the bottles age, the flavors will blend and it should be better.

Thanks for the info. Being new to homebrewing, I dont have much patience yet.....
