Hello,


I am planning on brewing the following beer in the next 10 days: https://www.brewersfriend.com/homebrew/recipe/view/561179/hybrid-ipa

I will mash high at 154.4 F/68C and will split the dry hopping in two charges, 3 days each.

I do not have kegs, so I bottle using a bottling bucket where the sugar solution is poured first and then siphon the beer on top of it, ever so slow and without splashing.

I also will not dry hop during fermentation as this seems to be a problematic step when not kegging. Exposuree to CO2 will corrupt those hop oils during fermentation and the beer will go brown a few days after bottling.

This is why I will let the beer ferment and then dry hop and proceed with bottling.

I am thinking 2 weeks in the fermenter, then check gravity and dry hop. Bottle at days 6 from dry hopping and the beer should be ready in 10 days.

Is there something I can change, to make this brew better? besides keggin, that is*
 
Seems like a lot of wheat to me. Also, if you're calling it a DIPA then those IBU's are definitely not right. They need to be bumped up probably by 30IBUs. Toss in another 15-25g of Columbus at 60 mins.

Another point to make, if its going to be a big DIPA (8% as the recipe calls for) then I would not mash that high. Even with the Pilsner I think it will have plenty of body due to the wheat. If it were me, I would mash at 150 or lower, but my DIPA's I always mash at 148.

Also, with Pilsner malt you probably want to boil for more than 60 mins to help boil off that extra DMS that pilsner supposedly carries
 
kev211 has all good info. I'd limit the wheat to 20% max. Boiling longer could get you better color, as well. I would mash lower, as mentioned, and use DIPA IBU levels.
 
Why is it too much wheat? Does the Wheat not work with hoppier beers or is it merely " unusual " for the style?

But YES, it is not a Double IPA, if you look at the IBUs, but it is a Double IPA as it is 8% ABV and contains lots of hops. I love the higher alcohol and the fruitty hops, but have come to dislike the bitterness. This is why the IBUs are lower than normal, but everything else is there.

I like Wheat as it adds great taste and body to beer, but possibly could be misplaced here. As long as it will not ruin the beer, I think this would be a good experiment to make.

Regarding the colour: I prefer a hazy, bright yellow colour or at least this is what i am trying to do with my latest brews.

I was thinking of double dry hopping: 3-4 days for each charge and then bottle.
