Is there any reason not to use quick connectors to add strike water via the mash tun outlet and manifold? After the mash you could close the valve(!) and move the hose to the boil kettle. I'm a noob so feel free to L.O.L.

You would be pushing water against the grain bed. If you are gravity feeding you likely will hit a point where the hydrostatic pressure of the mash will equal that of the water coming in from the hose and you will stop flowing, up to that point you will flow water much more slowly than if you put the strike water on top of the mash. If using a pump, you would be working your pump harder than needed which would lead to premature pump failure and possibly over heating it causing it to shut down until it cools...which is highly annoying.

No reason. My system is a two tier. I've been doing it with a gravity feed for a long time. No reason it wouldn't work with a pump. I also add sparge water this way with no problems. Just stir while adding the water to keep the heat even throughout the mash.
