How do I go about modifying my brew kettle and adding things like a thermometer and ball valve?
 
Get a weldless SS ball valve kit from weldlessfittings.com
Get a sight glass/thermometer kit from brewhardware.com
Get a 7/8 step bit from brewhardware.com

Get a drill, a file, and some vegetable oil.

Watch some videos online.

Drill the appropriate holes in the appropriate places.
 
These are all great tips! Make sure when you install a thermometer you position it at the proper height. Too high on the kettle add you won't get readings when the liquid drops below the probe; too low and you risk damage to the thermometer from excessive heat produced by the burner.
