I can get them really cheap however, I'm worried that my sanitizer would pit the food grade coating on the inside. These are not stainless just regular steel.

Just to be safe. Once the coating is compromised the beer will start eating at the steel. Have you considered the large plastic conicals? You can build one of those setups for relatively cheap.
