Alright ladies and gents,

Title says it all! 3rd All Grain going right meow! Here's the Recipe:

8 oz Carafoam
8 oz Crystal 40
13 lbs Pale malt 2 row (US)
1 lb Munich Malt German 1

1 oz Cascade @ 60
1 oz Palisade @ 20
1 oz Ahtanum @ 15
1 oz Summit @ 5


Yeast: Wyeast American Ale 1056.

Threw this one together! Shooting for an IPA for a local Homebrew Competition in San Antonio. I know I'm fairly new to All Grain, but I really want to meet other Homebrewer's here in town and I figured a competition would be the prime place! Just doughed in @ 151, was shooting for 152, but I hit 151.7, I'll take it!

Please let me know your thoughts on the recipe.
 
Opened her up at 5 minutes in to check temps, 152.7!!
 
Opened up after 1 hour and hit 150.9....again (same temp as the last batch I brewed when I opened up after mashing).
 
Usually I try not to freakout, but I hit 1.034 SG - the temp was about 180ish, so I started to panic. But I put the temp in and at 60 degrees it would be 1.063, which is the ballpark figure I was shooting for in my preboil (actually shooting for 1.058). So perhaps my system got better. I did notice I got a lot more water than I expected, used roughly about the same amount to batch sparge as mashing. So I don't think I'll do that again. Hopefully it'll boil off.
 
*Hit 165 on "mashout," let sit for 9 minutes. Had to vourlaugh quite a bit, took 3 times until it cleared up.

I have never used this big of a grain bill and I'm not used to this much water. It has almost filled my 9.5 gallon brew kettle. I would estimate I am at about 8.5 gallons, if not not 9. Don't know if it will boil off enough or if I will be boiling for longer than 60 minutes. Oh well. the joy of homebrew right?
 
DOn't trust the SG at that high of temps. Let the sample cool while you start the boil, I put my test jar in a bucket of ice water and then put that in the fridge (or outside). I don't trust temp corrections beyond a few degrees.
 
Had a pretty epic spill over. Had to switch burners to the other side of the oven. Really freaking blows. I want to clean it up before SWMBO gets back but its too hot and I'm still brewing! Worst part about it is, when I poured in the hops, it immediately went to a full on boil over. From the looks of it, it looks like most of the Cascade hops are long gone now!I might adjust and add some of my other hops in a little earlier.
 
Start using fermcap-s, just a drop or two will do it. No more boilovers. Also, reduce heat before hop additions if you're close, although I never have issues with a few drops of fermcap.

Thanks. I'll definately do that. I take it fermcap-s doesn't impart any flavors? I also picked up some whirlfloc for today's brew. I've never used that. Anyways, beer is boiling right along. I think I will probably hit right at 5.5 gallons or possibly 6.

Nope. It's just a coagulant. Mostly people use it in fermentation, or that was what it was designed for (reduce blowoff) but I never use it there, only in boil. There was a brief debate about the ingredients possibly being not good for you but it was quickly put to bed by the fact that the amount we use in homebrewing is a very, very miniscule portion of what's even considered questionable. Something like a tenth of a percent of what was questioned.
 
Looks like a sound recipe. I would have used the Cascades as the finishing hop because they have excellent flavor aroma. For an IPA you should really think about dry hopping! 2-3 ounces will give your IPA an amazing aroma!
 
Just wanted to give an update,

Beer finished at 1.012. Of course, here are some pictures...

I can't tell you how pleased I am with this one (out of the fermentor). It tasted, smelled and looked beautiful. The pictures really didn't do it justice!

A spray bottle filled with regular water will keep the foam down too.
 
Yes, will definitely be using a spray bottle next time.

Learned a few things from this last brew session. Oddly enough, this is by far the best tasting beer but I seemed to have the most amount of mistakes. Such is the joy of home brew...
