General question: Is it safe to bottle my beer in the large 32 oz bottles with the rubber stoppers? I carbonate in the bottle. If so, how much head space should I leave?
 
should be fine, but test them by putting a carbonated drink in it and let it sit for awhile and see what happens to it. I do this with my grolsh bottles because I mostly keg and will use them when traveling with my beer. They always seem to work but I test them before the maiden voyage. So in summary they should work, but test first in order to get some piece of mind
 
I was actually going to buy some from my local brew shop. The owner said it would be fine to use but I wanted some other opinions.
