I just took the FG and it is 1.001! That is the lowest I have ever gotten with a FG reading! The estimated attenuation with this strain was about 86.3% to take me down to 1.007. My OG was 1.051. Instead of targeting a 5.8% ABV, I got a 6.7% which is out of the range for this style, but hey, I am astonished by the work this yeast put in! I made a starter with a pack of French Saison and it took off in less than 12 hours. These guys did good work. I did mash low at about 148 deg F to get a dry beer. Well, this guy is as dry as can be!!
 
Last summer I ran three consecutive saisons on the same 3711 yeast cake. Even by the third one, that yeast wasn't strained. It was going like crazy.
