Need help bypassing old winecooler thermostat.

Purchased a Inkbird Itc-308 to run a used wine cooler as a ferm chamber, but even with the clunker's dial at max the compressor often wont come on despite the Inkbird showing it's feeding power. I'm a total noob at electronics but I've managed to locate wiring for the internal thermostat and potentiometer.

Can I just bridge the lines for both to make it so the compressor is on whenever the external Inkbird decides to supply juice? I've read elsewhere some thermisters double as overload fuses, and I'm not sure if bypassing the pot will do much since it's already set to highest. Just looking for some feedback before I start cutting wires, thanks!
 
Looks like using controller between 2 blk line wire and red 3 load will run both compressor and condenser fan
 
After posting hbt suggested this thread. If I'm reading it right you're both suggesting nearly the same thing. Assuming I don't want to start cutting open the inkbird wires would something like this work?

That looks correct, that would bypass the thermo and it would run 24/7. Now the downside is you lose the light when the inkbird shuts off as you are switching the main power. For 20$, you could wire in an stc1000
