    You shouldn't bleed off the CO2 from your keg. The pressure build up is what keeps the CO2 in solution.

    I stopped bottling when I started brewing 10 gallon batches. Now I always brew 20 gallons. I can't even imagine bottling 20 gallons.

    Plastic is fine for a starter. If you drink apple juice pick up a couple Martinelli's apple juice in the juice aisle. They are 1.5 ltr Glass and are great for starters.

    I would leave it in to ferment a while longer. Where do you have your fermenter? If it's in the garage, you might want to bring it into the house to get the temperature up closer to 70.

    It made sense to to get the larger carboy. I do a secondary fermentation in 5 gallon carboys. I have four of each. I don't like to spend money that I don't need to. I've been brewing since 93 and have accumulated a lot of stuff. I do get angry when I break one of those bad boys.

    If you're going to do it like the instruction say the extra water needs to be cooled. Probably almost frozen. That will help bring your temp down quick.

    I've never been that concerned about that. But if you are you could buy a couple pounds of DME just in case.
