    Non Carbonation

I do the dame thing for all of my beer thus far. I use a bottling bucket, add my sugar water, then the wort, then bottle. So even carbonation should be reached. Can't think of anything I would have done differently. Cheers

    Non Carbonation

So I made a Wee Heavy Scotch ale last at the end of last summer. It landed about 8.5%. I bottled into some 12oz, some 22oz, and some 8oz. The first 12oz bottle I opened had the correct carbonation, but it was still young. I gave a 22 to a brew buddy of mine, a few months ago, and she said it...

    Carboy protector

So I have heard horror stories about broken glass carboys, and a lot of you have the scares to show for it. I don't know if I have found the solution, but this is something that I have come up with. I was in my local hardware store looking for some laquor (to protect some labels) and found...

    Nut brown ale

In a full mash you are using the grains to get the sugars and flavors. You can supplement the sugars and flavors from the can by steeping grains to get flavor and body from them. I use a nylon bag to dip the grains into 150-160 degree water for 20 min. or so. Picture a tea bag, same idea...

    Nut brown ale

Well, I may stand corrected. But it is true that it is the best stuff I have found. It works for me, but I suppose that I would not want to put things in my beer that I do not know where they come from. Thanks bird! I had suspitions, but nothing to back it up. Cheers Matt

    First post and first batch

The blow off tube will work well for your primary. But I would not use it for the secondary (clearing). Durring the primary fermentation there is rigorus fermentation action, and therefor the need for the excess gasses to escape. Durring this process, an airlock may not provide a large enough...

    Nut brown ale

I also added 2oz to my Porter. It is still conditioning in the bottle, but it is very drinkable. If you are just using cans of Malt Extract I would use 1oz, but if you also add some grains and steep them, You could use more. Depends on the effect that you would like the vanilla to play...

    Tribute Ale

Another idea is to incorperate hot peppers into the brew, he was a fan of peppers. More stimulation for the ideas. Cheers Matt

    Tribute Ale

Thankyou all for your warm responce. It is nice to feel the love in this small community of brewers. I recently drank a beer called "Old Crumudgean Ale" from Founders Brewery. Being an "Old Ale" it had a higher ABV (9.3). This is what I thought of when the sugestion was to make an "Old Guy...

    Tribute Ale

I can't speak as to what he liked to drink. There is a beer called (?) Lone Star we drank with him. Fairly close to a Budweiser, nothing I would be terribly excited about. Without going into great detail, he was a bit of a trouble maker with his twin brother growing up in ALice Texas. He...

    Tribute Ale

Good Day All! My Grandfather passed on last night. He was 83 and spent his career in the military (Navy Man). He had worked his way up from enlisted to a Comander. He was a Pearl Harbor survivor, served in Korea, Vietnam, & WW2. He was a Texas Man and was very proud of that. He was a...

    4th Batch

OK. So my first error that I have noted so far is that I did not take a OG reading at the beginning. Fermentation has slowed. I am wondering, with a beer of this strengh, should I repitch the yeast. I did use a starter, but not confident with it. It had a fairly good bubbleing in the air...

    4th Batch

I suppose that I will wait and see what it tastes like at secondary (clearing) and make my decision also. I do think that I would still use a low AA hop and just use a wee bit. I know that time will help to mello the alcohol, but I did want this to be a balanced beer that could be enjoyed. I...

    4th Batch

My appologies on the terminology, you are correct, I will edit. Thank you. The low AA% Hops was intended because of the style of beer. I was aiming for a more malty pressence. But because of the Higher Alcohol I was worried about the balance of hops, so we will see. Exo- Interesting Recipe...

    4th Batch

Just finished brewing my 4th beer. I decided to try a Wee Heavy Scotch Ale, with the hopes it will be in its prime around January or Febuary. I added ingrediants to a Scotch Ale Kit from Coopers. It should end up to be a 12% brew. I have bought some 7oz Coronita's (small corona's) to use to...

I am planning to so a fortified Single Malt Scotch Ale, and am wondering what yeast I should use? I like to use liquid yeasts from White Labs. Any sugestions? I am going to add the Single Malt Scotch to the secondary before bottleing to taste unless anyone has any other ideas. Let me know...

    Fortified Beer?

I am looking at the possibility of adding some whiskey or scotch into a future brew. Does anyone have any recipies or recomendations? My thought is making a "Single Malt Scotch" Ale, but any help would be wonderful. Cheers
