    I don't think you're going to get all that much bitterness from the hop stand if you're starting at 150F, so I wouldn't worry about it too much. If you want a big aroma, you can definitely stand to up the dry hop additions. I'm in the 3-5oz (for a 5gal batch) range, so maybe .5oz - 1oz?

    RDWHAHB. Doesn't sound like anything to worry about to me. Just give it time and let the yeast do its thing. The bubbling means it's working, even if it seems slow.

    Yup! Came to say Kolsch, and all of this is true too. Good luck, definitely easier to have the lower temps to deal with than higher, IMO. You could also pick up a Brew Belt or something similar that gently warms the beer, and a temperature controller. That way you've got the best of both worlds!

    It should! Keep in mind that yeast is usually stored in a refrigerator before you pitch it, so now that it's getting back up to the temperature that it like to ferment at, it's getting to work.
