Seems like you can do a practice run on an easy AG and still have time to knock out a Christmas ale. I'm doing the Austin Homebrew mini mash and I'm not sure if it's going to be spiced enough. The spices were thrown in at 50 minutes and I couldn't really taste them in the hydro sample
