My local hop buy from hops direct came in today. Nothing like this one at 12lbs and 5 people, but everything was packed very well and we had great service!

Simcoe is a common hop that some perceive as being catty.

I have read that sugars will help encourage higher attenuation and that brown sugar adds complexity so I figured the addition of some brown sugar would give me more flavor and help ensure that FG wasn't too high. So you would recommend some in the mash, boil and secondary? Sounds good to me...

Hmm, I thought the Marris Otter would give more malt depth. If I remove it I would up the 2-row to 13lbs and up the crystal up to 1lb. That should allow for a mouth feel that isn't too thin while retaining the hop focus I want (I think). I don't want to have this beer be too bitter which is...
