    Bramling Cross can have a really nice blackcurrant-y fruity note if you use a large amount of it for aroma. Alternatively, to my palate Simcoe can be very "peachy" which might set off the Sorachi nicely.

    Belgian Pilsener and Centennial is lovely, particularly if you use a Belgian yeast strain. Kinda like a Belgian IPA (Stone Cali-Belgie, GD Belgica etc) but slightly herbal and "dank".

    I like the sound of this... Not sure what to use yet, but I fancy doing something sour, might try with a 75cl bottle of Cantillon or Oude Gueuze. By "the new wort," I assume you mean the starter wort (ie. DME boiled up in some water)?

    I'm pretty new, but I would say you can afford to drop the crystal a little bit, and replace the Vanguard with something a bit juicier - Cascade, Simcoe, Nelson Sauvin, Amarillo...? You might also want to dry hop with something more aromatic - one of those ones would do the trick. Just my 2...

    FWIW, I went ahead and added the honey just before flameout (about 2 minutes to go). I also decided to add 8g of Cascade at flameout for aroma - that was all that was left in the bag so it seemed to make sense. Plus I have a terrible habit of spontaneous recipe changes... Almost bang on the OG...
