Belgian Dark Strong Ale Leffe Radieuse Clone

Hope it turns out ok for you. I like the idea of using Brett B on this recipe. I used the same malt recipe to make a Belgian IPA a while ago and it turned out very nice. Let me know how the brett version works out.

How many don't rehydrate their yeast?

I have brewed a few pro batches under contract, S05 was used for 3 of them. The first batch, the yeast was rehydrated and the other 2 dry yeast was dumped into the fermenters. There was no noticeable difference between the batches. Each batches were 2200L and the OG was 1053. They all came down...

Belgian Dark Strong Ale Leffe Radieuse Clone

I would think so, the beer is red purple ish in colour. Aromatic, caramunich and special b are on the dark side so i don't think your syrup needs to be to dark to recreate the colour.

    recurent infection problem

Yes they are but unfortunately in Ireland you don't have much choice. As there is only one with a decent selection.

    recurent infection problem

Yes I do sanitize the cisors to open the bag of hops. As for not using the muslin bags, you loose a lot of beer with this method. Admittedly a lot less than if I have a infection.

I will replace the syphon hose but I use it also with other beers that are not dry hopped and they turn up fine.

    recurent infection problem

I have a problem with infection during the dry hopping stage. I don't know what to do anymore to prevent it. When I move the beer in the secondary the beer is fine then I dry hop and several days later I have the infection you can see in the picture. I bleach my fermentation buckets, then...

Mich. teacher gives 5th graders non-alcoholic beer

When I was in school, we were served beer with some alcohol (not much though 1.2%) That is when I was 12 years old. In Belgium I guess we have a more liberal attitude towards drinking age. At the time there was none. I believe that now you need to be 16 to drink in Belgium. I remember the...
