    Any experience with T-58 yeast?

    I know this is an Old thread but does anyone know if there are certain FAN requirements this T-58 yeast? I ask because I know S-04 requires a protein rest for adequate FAN... Thanks

    I guess I'll do this again!. This is one I just bottled and had a little left over to drink. Its called "Sage Against The Machine" I will enjoy this now.

    Here's one I just bottled and had some left over.....That I started drinking....And then came across this thread!!!!. Its a bit cloudy lookin cause it was towards the bottom of the fermenter. Its called "Sage Against The Machine" Got it bottled in time for New years!

    yea i figured it out. Human error.. The top of the fermenter I guess wasnt screwed tight enough. Not used to these things, now I know. Thanks

    I waited the next day to pitch the yeast so it was around 70 degrees. and its about 60 now. I added sage and juniper. Never took a hydrometer reading, I attempted to but didn't have anything to take a reading from like a flask of some sort I put it in the brew kettle but it hit the bottom.

    Ok so now I'm having an issue. It seems that fermentation is at a halt for some reason. I understand that sometimes your lock may not show signs of fermentation.     I didn't have a secondary vessel to put it in. Also I heard that its not always necessary to put it into secondary. But I dont know, I guess this is just an experiment.

    I just took a taste it taste fine and it smells fine. I shook it up a little bit. Thats why theres a lot of white specks. Before they were globs. But yea it still tastes incredibly hoppy. Dan

    My brew has been setting for about 3 months. I havent looked at it till now. It looks like fat or white wax floating on the surface. Do you think it could be temperature, cause we just hit over here with snow on the east. Or do u think its contaminated?. Thanks Dan
