    Question regarding grain weevils

    What do you use?

    An STC-1000 in a waterproof case. Should work at a thermometer, I would check it against a known correct thermometer to make sure the readings are accurate.

    Chinook

    Definitely an IPA. But I would bitter with something smoother like Magnum and save the Chinook for the last ten minutes for a big, resiny, piney taste. And dry hop with Cascades.

    Any ideas on my sterling?

    My Sterlings look the same way. They must be more susceptible to leaf diseases than other varieties. If it were insects or leaf miners I would think the rest would have the same problems. My Cascade, Chinook, Columbus and Willamette are all planted in the same place and don't have the same issue.

    Fermenting in Larger Bottles

    When I use my 1 liter flip tops I prime normally. I will fill a few of them and the rest goes into 12 oz. bottles. Never had a problem.

    Bottling wine in mason jars?

    The lids will seal well if there aren't any chips in the rim of the jars. I have used them for beer and didn't have a problem as long as the lids were tight. Although the wide mouth jars don't work as well if you are carbonating.

    You don't really need a vacuum. Bottles don't have one. Just sanitize everything and screw the caps on tight and you should be good to go.
