    Yeah, that may age out of the PA with that yeast, but the Belgian is most likely going to be full of :ban: flavor, but that is what you aim for with that brew and that yeast! -Cheers

    for the wit "WLP400 Belgian Wit Ale Yeast Slightly phenolic and tart, this is the original yeast used to produce Wit in Belgium." -white labs site so that explains that. Not sure why the PA would have the phenolic attributes, maybe a high temp start to fermentation....

    Infusing a fruit

    What fruit are you considering? I added 4lb strawberries and 2lb blueberries to a Belgian Wit last year (called it red, wit and blue) came out nice. I just made a star san bath and dunked the fruits before adding to secondary. :mug:

    Dude, you gotta chill that brew before you sample. Also, this can happen if you bottled before fermentation has come to fruition. Do you have gravity readings to help troubleshoot?

    Hey Shea, I think the wlp001 would be a good idea, given your fermenting capabilities, since it is optimal at 68-73 deg. Also, Have you considered wlp051?
