    Carboy Overflow... darnit!

Against my better judgment, I stole some yeast from a chimay bottle in an attempt to make a chimay clone from a recipe book that I have. (I left 1/2 inch in the chimay bottle, made a mini wort, poured it into the bottle, and let it go for 2 days. Then, I transfered what I had in the bottle...

    Lager Question

Either one of those could certainly be a possibility. I aerated by shaking the heck out of my carboy for a few minutes. My starter wasn't very big - maybe two pints. I read somewhere that a larger starter is better for lagers - oops. I kept it in the 60s for about 2 days - I saw signs of...

    Lager Question

I used White Labs Oktoberfest/Marzen liquid yeast. I pitched in the upper 60s. I can't remember the specific temp.

    Lager Question

Okay, I got my 3rd brew going. It is an Oktoberfest - my first lager (extract). The original gravity was about 1.067. Fermentation was never really vigorous, but it did get going pretty good for a couple of days. After those couple of days, I have been getting airlock activity about once or...

    My Second Brew

I am going to try my best to take you guys' advice and just be patient. I will certainly take the advice to brew another batch (and another and another). A California Common is on the menu for Saturday.

    My Second Brew

And, I was contemplating today... I thought, hmmm, the most I can wait before I bottle from the secondary is 1.5 weeks. Then, the most I can wait before cracking open numerous bottles is 2 weeks. You are telling me to wait 2 full weeks in the secondary and then essentially 11 before opening...

    My Second Brew

Well, that's good to know. Obviously, I don't quite understand what conditioning constitutes. For some reason (not based on anything I read), I thought conditioning was more related to the beer improving in taste during the carbonation process. If I am safe either way, then great! Anyway, I...

    My Second Brew

I just racked my second brew, an extract, to the secondary. I took a little sample in the process. It tasted great! Way, way better than when I sampled my first, which is still conditioning. I am making Papazian's Toad Spit Stout. It was in the primary for about 9 days. I hope it doesn't...

    Love my new immersion chiller

Just got my immersion chiller yesterday. :ban: I bought a brewing equipment kit from my local home brewing store, but they didn't have the immersion chiller in stock. They gave me the other equipment and said that they would call when the immersion chiller was in. It was a long three weeks...

24 hours no sign of fermentation?

Not that I know anything as I am new to this, but my second (and current) batch took almost 36 hours to show signs of fermentation. Now, it is fermenting like crazy. Maybe you'll have the same luck. :mug:

Possible Fermentation Problem with First Homebrew

Thanks for the links. I haven't taken a hydrometer reading since it has been in the carboy. I'll do that.

Possible Fermentation Problem with First Homebrew

I am brewing my first beer - an English Pale Ale (kit). My primary fermenter is a 6.5 gallon carboy. During the first 24 hours, fermentation went quite well. After that, fermentation diminished, not completely, but almost. It has now been in the fermenter for roughly 2.3 days as of now. It...
