    Mash out

    Is it ok to mash out using hot water to raise the temperature, or is this a bad idea? Should I try to mash at the lower range of qts/lbs if it's ok to use added water to mash out?

    Evaporation

    I am going all-grain soon, and have the setup ready. Would it be an advantage to test out my kettle's evaporation rate with water before brewing my first batch? This way it will be easier to calculate my pre boil volume right?
