    Soap does kill spoiling microorganisms to negligible levels. Trust me. I used to work in a microbiology lab that worked on antibiotics.

    I did a brett saison and mashed at 160. I was trying to leave some sugar for the brett and it worked out well.

    What is your "go-to" beer?

    If my pipeline is running low I'll pick up a keg of Dale's pale ale. Oskar Blues give 15% off for homebrewers association members so it works out to be a pretty good deal. I also buy it pretty often for camping and other things since it comes in a can.

    I do sour worting as well. However, I drain my wort into a corny keg and purge it with CO2. I then stick my keg into my mash tun and fill it with water and stick an aquarium heater in the water. The mash tun lid won't close because the keg is too tall but I rest the lid on top and throw some...

    Glass top stove and a 5 gallon brew pot

    If you're going to use a glass top stove, I'd go aluminum because it's a much better conductor. I did stove top brewing for a few years and an aluminum pot helped me a lot. My girlfriend's house has a glass top stove and I tried brewing on it several times and it was extremely difficult.
