I'd skip Coors, in Denver you have breckinridge, strange and renegade brewing, colorado cider company all within walking distance of each other near, Santa fe arts area. Copper kettle, bull and bush in cherry creek area. Denver beer co just opened a couple weeks ago havent been there yet but...

The added enzymes could help butFermentation control and proper pitching rate are key. make a HUGE starter and pay attention to fermentation temperatures I wouldnt call 155 "all purpose" it would create a lot of unfermentable long chain sugars as with lots of extracts

Der Halve Maan in Brugges, Belgium isnt bad. Somewhat touristy but they make a great Tripel. Plus the town of Brugges is just beautiful
