    Closed-system pressurized fermentation technique!

I'm in my third (and fourth) batch using this method and liking it! Two questions: how do you guys draw samples? If I pull from the liquid out in a sanke or corny all I get is yeast and trub. I assume that I wouldn't want to draw this all out right away? Secondly, dry hopping. I like to dry...

    No-chill temp into keg?

And why don't you do this anymore? Just the cleanup issues or something else?

    No-chill temp into keg?

I've done exactly the same routine with no problems, and really no cleanup issues. I siphoned into primary though, so the corny dip tubes were never in use. One of the main benefits of no chill for me is creating real wort starters. Just fill up the flask before filling the corny and pitch the...

Gushers indicate sanitation problems at what phase of the brew day?

If it wasn't done, it was stalled out pretty good. Don't have my notes in front of me, but it was in primary for over three weeks, then 6-8 weeks in secondary. Interestingly enough, when I transferred to secondary I recorded 1.014... Sloppy reading I would guess.

Gushers indicate sanitation problems at what phase of the brew day?

I used 5 oz of priming sugar. FG was 1.020. I'm inclined to believe that the increased temperature for a week woke up some yeast and lead to over carbonation. But, the reduction of body and flavor seems to point to gusher. Underlying question: do I consume the batch quickly before the gushy...

Gushers indicate sanitation problems at what phase of the brew day?

I suppose bottling bucket/wand makes the most sense. Bottles received the usual treatment (Oxyclean soak, bottlebrush scrub, soak/dunk/rinse with Onestep). I guess I was just curious when the wild yeast/bacteria find their way into the beer- like if it was something to do with transfer to...

Gushers indicate sanitation problems at what phase of the brew day?

I've been kegging all of my batches for the last few years and haven't experienced any indication of infection. Lately I've been brewing 6 gallon batches and bottling what doesn't fit in the keg to age. I recently sampled a bottle that was approximately a year old and it was extremely...

Popped Air Lock - Any Recovery?

Any good suggestions for cleaning/sanatizing large diameter tubes as in picture four?

    (Un)related problems?

That did not occur to me, I'm pretty new at recipe formulation, so I appreciate you bringing it up. Regarding aeration, I use the cooled brew kettle to not loose wort to foaming, and to give time for trub to settle out before transferring to a carboy. But would aeration via aquarium pump and...

    (Un)related problems?

Mash temp could be a factor, I was shooting for 154, my usual temp.

    (Un)related problems?

Just transferred an APA from primary, and its very sweet, with a relatively high gravity (1.018). I'm hoping for suggestions to improve this and future brews. Recipe: 11# 2 row 2# Carmel 60 1 oz Cascade 60m 1 oz Cascade 25m 1oz Cascade 10m 1 oz Cascade 3m 1 oz Cascade 0m 60m mash at...

    Soil Contaminants

Can anyone confirm that hops do not accumulate soil contaminants (primarily metals) in the cone? I have found several articles about using hops for phytoremediation, and they all reference accumulation being measured "after harvest" in the stems and leaves. My (wives) concern is growing hops...
