    Belgian Pale Ale -- sourish, lingering hop bitterness

    I'm far from an expert, but I'd try to track down a Petrus Pale Ale. It's a nice belgian pale with a fairly strong sour character as well as notable hoppiness. It's oaked as well, but the oak really just contributes to the finish. One of my new favorites. What kind of yeast did you use? Aging?

    Octane IPA kit from Midwest. Did an APA last week with s-05, goign swimmingly, but that was only 1.046 OG. Kit has been at my house for a week. Lord knows how long they had it, they seem reputable, so I wouldn't imagine it's really old stock.

    Doing an oaked IPA extract kit. Came with 2 packets of dry S-04 yeast. Plan on re-hydrating, wondering if I'm better off using one or both packets? 5 gal batch, 1.068 GG, plan on rehyrdating in 8 oz of water.

    I think I'm going to use this as an opportunity to try minimash for the first time (3 extract brews under my belt so far). Can anyone recommend one of these that might be on the "forgiving" side for a first time masher? I'll be using DeathBrewer's technique from this thread...

    Hmm, the Republicans are just upset because their party's version was over-aged, stale, way off balance and left the taste of sour grapes in their mouths. ::zing:: No really, politics aside it's a cool bit of validation to see homebrew in a setting like that.

    I have only ever ordered from Midwest, they've never given me reason not to. The AHS clone selection is tempting though.

    Jim Koch himself poured me a glass of Utopia back in 2009 at Aspen Food and Wine fest. I'm really glad I didn't pay for it.
