    Using fruit in beers...how to??

I put fresh fruit in a secondary carboy and then rack the beer on top of it after fermentation is complete.

    Beginners guide to fruiting beer

Three pounds should be plenty. When I add whole raspberries, I simply froze them and then dumped them in the carboy when it came time to secondary. (Let them thaw a bit first.) I didn't bother pureeing them in a blender.

    Raspberry Wheat Recipe Help

Three pounds of raspberries for five gallons works well. That's the ratio that I use for my raspberry saison. I disagree using pre-frozen berries however. The first couple of times I brewed my saison I bought fresh raspberries, froze them in my freezer, thawed them, and racked on top. The...

    Overcarbonation Paradox

It doesn't taste infected and it doesn't look infected, but that's something to consider. The pale ale was fermented at a cooler temperature than the saison so maybe I failed to account for the amount of residual CO2. For what it's worth, I shared some of the pale ale with some friends and when...

    Overcarbonation Paradox

So I was bottling my raspberry half of the saison when I decided to crack open a bottle of the regular half of the same batch that had been bottled for 3 weeks. I did this to check the carbonation because I was slightly worried that I put too much priming sugar in at bottling. This is the third...

    Tart Raspberry wheat

I'd just leave it as is. Since you brewed this for your wife, I assume she likes raspberries (and their tartness). Keep it simple.

    Raspberries in secondary?

I've done the fresh raspberry route a couple of times, but I didn't mash them. I just plopped them in whole. Worked beautifully.

    Mixed Berry. Blackberry cherry?

The general guideline I've heard/used is 1 lb. of fruit per gallon of beer. For the raspberry saison that I make, I lower it a bit because raspberries have a pretty strong flavor. I use 3 lbs. per 5 gallons. I bought fresh raspberries and froze them. And then let them thaw and racked on top of...

    Lawsuit Against Anheuser-Busch

I thought it was funny that the gents that were bringing this claim were essentially saying, "how can we get drunk if they're watering it down?!" Somehow I doubt they were doing some sort of calculation of alcohol per dollar across varying beers and spirits. (Side note, if getting drunk is your...
