    Any benefits to boiling more than 60 minutes?

    I've always done a 60 minute boil but I've been watching You-Tube vids. and the posters sometimes do 75 or 90 minute boils. Is there any benefits to doing that other than reducing volume to fit the fermenting vessel better?

    Old Pale Malt

    Found a bin in the "junk room" and it had about 20 lbs. of pale malt in sealed plastic bags.     Reusing Safale 05

    I'm going to do an APA using 05 and then plan on washing some of the cake and doing a blond ale. My question is will there be any problem using yeast from a higher IBU ale to using it for a lower IBU brew in terms of flavor or doesn't make any difference?
