    That looks like a normal krausen. Some beers ferment more vigorously than others. What kind of beer is it?

    Whatever you do, just be sure to add your mace in the secondary rather than during the boil otherwise it won't impart any of its flavor.

    Yeah, they make priming tabs where you basically just put one in each bottle. You can also just put regular priming sugar in each bottle. I don't remember the amount but I think it's are 1/2tsp.

    How do increase ABV but not adversely effect taste?

    Austin Homebrew has some sort of "ABV Boost" thing that supposedly adds 1% to any beer without affecting the flavor and I don't think they cost much. I have no idea if it works or not. Perhaps someone on here can vouch for or against them.

    You're supposed to rehydrate yeast at about 100 so I think you're okay.
