    A Kolsch is much like a Pilsner and it is fermented with an ale yeast. It is cold conditioned to clean it up. So if you brewed with the Pils grain bill and use an ale yeast with clean characteristics like US-05, I'm sure you'll end up with an excellent beer.

    This may be the dumbest question ever...

    Yes, you could force carbonate with soda stream. it is the same basic setup as a keg system. I like carbonated water on occasion and thought of purchasing one for that, added bonus I could force carb beer for hand outs to co-workers. Not a stupid question btw.
