    Sour Beer Recipe anyone?

I was looking for a good recipe for a good sour beer. I have had limited exposure to sour beers but I loved rodenbach. I could not find a rodenbach clone. Anyone have something close to this?

    First brew in 5 months

I know this is more of a rant then anything else, but damn it feels good to be back. I had some health issues for the past 5 months and they are on going BUT I managed to bottle a batch of Black Pearl Porter that I brewed back in oct. I also brewed an English Mild also. As I said, damn it...

A spoiled batch? I could really use some feedback

So I made a batch in a bucket back in September. I fell ill and am just now feeling better. The question is, I checked the beer and it is not visually infected and while I was sick, I kept the air lock filled with Vodka. Do you think it would be worth bottling or should I just chuck it...

    Cooler Mash Tun Questions

So I have purchased a 5 gallon cooler to make a mash tun out of. The only issue is, it has a removable spout unlike most. The opening after I remove the whole spigot is MUCH larger then most. Check out the pics and tell me if you think this is going to work.

    Coleman Cooler Mash Tun

Here is another question. I got a 5 gallon round coleman cooler for a mash tun. Is this to small? From what i have read, for 10 pounds of grains, you need 2.5 gallons of water but I do not know the displacement value of the grain. Did I waste money on this cooler?

    Apfelwein fermenting @ 60-62 degrees

I just started my first EdWort's Apfelwein this weekend. Its fermenting away with an airlock bubble about every 5 seconds. I have it in my basement and it seems to be sitting around 60-62F, atleast thats what my carboy thermometer says. What issues could I run into with it being this cold?

Anyone done the AHS Our Special Holiday Ale?

So AHS Our Special Holiday Ale was the first beer I have done. Its been bottled for just about 3 weeks. I was wondering if anyone else has done this kit. The reason why is that mine has a weird after taste. It is hard to explain but it kind of tart or slightly sour, which I am HOPING is the...

Krausen fell after a couple days. Normal?

So I am brewing my second batch, a Brown Ale, and the Krausen on the brew has already fallen (4 days). I took a quick peek, which I know I am not suppose to do, and its pretty much all gone and it was only about 1 inch thick. The only reason I ask is because my first back, a spiced ale, had...

Fluctuating temperature while fermenting cause problems?

At this point, I have to keep my fermenters upstairs in my home because the basement is pretty chilly. The only problem is, I use a wood stove to heat and I keep the thermostat set to 62 during the day. I keep my fermenters in my kitchen, which I dont use the oven a ton and the kitchen...
