An aluminum pot probably works due to the sheer surface area of it and less electrical resistance from connections and dissimilar metals. I can definitely say an aluminum anode doesn't work in a SS converted keg with my water.

Why not cut the top off like you would a normal keggle conversion. Size it to a pot lid and use a sheet silicone gasket from McMaster to seal it? Then you could ensure no problem spots by soldering the inside. McMaster P/N 8525T41 or 8525T43.
