    Thanks much for the info! Re: yeast, which English yeast did you use? When I made this before with dry S-04 I found it to be far more estery than Dos Perros. I haven't tried this recipe since I started using liquid yeast.

    I use 1/4 lb in several of my lower grav beers (3-4% of the bill). In my opinion, that's plenty.

    I never tried the recipe again with less honey. After the last experiment I just never went back to it. It fermented out completely and left me with too much alcohol warming so I altered my Cream Ale and took it out. And won 2nd place Best of Show at the Music City Brew-off! :-)

    Brewing this Sunday and will ferment on a washed slurry of WLP080 Cream Ale strain. This has become my " go to" yeast and I'm hoping the lager strain that's in this yeast will help clean this beer up nicely with age. Can't wait!

    I follow the same process DeafSmith posted. The pump I use was just a simple pond pump I got at Lowes for around $65. Plug and play. Can't remember exactly but I believe it circulates 330 gph. It's plenty strong.
