    Making sure I get the right thermometer

    What type of a chiller are you using? A thermometer with a 2 1/2" probe should not get in the way of an immersion chiller. If you are using a plate chiller or a counter flow chiller go with the longer probe. The longer the probe the more accurate your temp reading will be.
