    I have about 12 bombers of Apfelwein left that have been bottled for about a year now, and they taste off. Very tart, with a chemically after taste and extremely dry. I was wondering if anyone in the portland area could help me decipher what went wrong.

    fermenting low and slow is probably a better idea than a 5 day ferment, besides you should let it clear before bottling and age a few months at least for optimal flavor.

    Bottled my apfelwein on the 6th of feb. and it tasted awful, still very tart after like 3ish months and it has a weird after taste, butter like or something very hard to explain. Its clear and there are no signs of infection although for it to go south after its been done fermenting for a month...

I always assumed that young cider would have more of an off flavor and some boozieness to it but ya this stuff is definitely tart.     Um tbh not sure, I tried to take a grav reading like 3 weeks ago and it read under 1.00 but the tube i was trying to float in wawsnt large enough in diameter so the hydro was catching on the sides of the tube. Either way im sure its well under 1.

    Ehhhhh well by the end of December it will have been 5 weeks, it its not a steady grav reading and clearing by then ill leave it be........doesn't need to be super clear. Worse comes to worse Ill bottle my 2 gallon batches which are abit older. A few bottles of "hot" cider won't bother me a bit...

    I can make better cheesecake than safeway.................there I said it. Following this line a homebrewer can make better beer than a prof brewer. IT JUST TAKES PRACTICE AND SPECIALIZATION.
