    I'm also trying to learn what's involved in brewing smaller batches, 2 gallons for me. I think Sivrat is right about the ease of the Brew In A Bag method. It will require the least amount of equipment and can save a bit of time when it comes to cleaning. If Sivrat is still following this...

    I'll third the auto siphon and add a long spoon if doing full boils. All I had for my first batch was a plastic ladle and although it did the job, a nice long stirring spoon works much better.

    Nice. Thanks for the help, my mind started to panic last night about the taste being to strong or the orange peels getting moldy, or any other number of problems from leaving the bags in there. You recommend leaving everything the way it is for the next week before bottling then?

    Yes I added the first bag with just orange peel to the boil with 15 mins left, then the second bag with orange peel and coriander to the boil with 5 mins left. I cooled and dumped the whole thing into the primary. Sealed it up and let it sit for the past week.
