    First Wine - Moscato

I've decided to try making wine (don't like the stuff myself). It's for my wife and her friends. They love Moscato so I decided I'll give it a shot. My question is about degassing. They like the "fizzy" style of Moscato. Not fully carbed but still has slight carbonation. Can I achieve...

    First Apfelwein, is it ready?

I prepared my first batch of Apfelwein almost 5 weeks ago, but I can still see bubbles crawling up the side of the carboy. It's not a lot, but it's enough to make me think it's still fermenting. I was hoping to have it ready to bottle carb for gifts but I'm not sure it's ready yet. Should I...

Looking for an easy first partial mash brew

I've been brewing since Dec 26th, but so far just extract + specialty grains. I recently bought a 8 gallon brew pot but I've been so busy I've only used it once. I'm hoping to be able to brew again in about a month and was wondering if anyone had a suggestion for an easy partial mash brew...

Easy way to speed up an Extract + grains brew day

This is so simple and obvious I'm surprised I haven't seen it mentioned before. Do you want to cut an hour off of your brew day? Well here's an easy way to do it if you're brewing extract + steeping grains....use 2 pots! Here's what I did yesterday and it worked great. I took my 5 gallon...

Can I add lemon zest to the primary?

I'm brewing a Lemon Corriander Weiss and the instructions say to add lemon zest to a secondary and transfer on top of that. Can't I just put it in the primary after a week or so and leave it?

    I made drinkable beer!

I got a starter kit for Christmas and of course brewed the next day. I've been drinking the first batch for a bit now and thought it was pretty good...not great but good. Anyway I gave some away and gave instructions to put it in the fridge on Friday and drink Superbowl Sunday. The good news...

Long Primary or Why is Homebrew different?

I've been doing a lot of research lately into the process of making beer and one thing I've found is that "comercial" brewers don't do a long primary in general. Now I can see this in a normal beer, but I listened to a podcast where this guy toured Rochefort and he says they bottle after a...

    Added Gelatin...airlock is bubbling again

Ok, I know the airlock is not a good indicator of fermentation so lets get that out of the way... Here's my situation. I've got an Irish Red in the Fermenter. It's been there for 2 1/2 weeks. I took a gravity reading yesterday and I was at 1.014. This was the first time I had opened the...

    Brewing my first "Big Beer"

I'll be bottling my Irish Red this weekend after 3 weeks in the Primary and will be going right back with a Midwest Belgian Tripel recipe after cleaning / sanitizing. I'm pitching 2 smack packs of Wyeast Activator 1214 due to the high OG (and I'm not ready to mess with starters yet...). I've...

    Had my first homebrew today!

I couldn't resist. I brewed a Cream Ale Dec 26th, it's been in the bottle a week and I figured what the heck, so I put one in the fridge Friday. I popped it open just a few minutes ago and it sounded like beer. Poured it in the glass...hmm smells like beer. Tasted it...guess what...it's...

Add honey after 4 days of fermentation?

I've got an Irish Red in the fermenter now that's been there for 4 days. I was thinking of taking a pound of honey, disolving in 1/2 pint of water or so, heating it to 170 and dumping it in after it cools back. I'm looking to get a honey aroma and a boost in ABV. Any problems with doing this?

2nd batch is fermenting...is a Big beer too bold?

My 2nd batch is in the fermenter and my 1st is bottle conditioning. I want do do a Big Belgian so I can put my secondary to use, it has been sitting there in my brew equipment box and looking at me, wondering if I'm ever going to use it. I'd like to do a Trippel but I'm not sure it will have...

Almost messed up my 2nd batch

I bottled my first batch today and decided to go ahead and brew another while I had everything clean. Things went even better than my first, especially now that I have a propane burner ;) I was sitting in my chair thinking about how well it went while waiting for the wort to cool when I went...

Oops! Sanitizer in the brew :(

I'm really hoping I didn't mess up my first batch. I think I'm ok but would like a 2nd opinion. Did a Midwest Liberty Cream Ale extract kit today. Everything went well (other than I need to get a propane burner, the electric stove just takes forever to boil 4 gallons). I decided I'd be...

    Delima with a Midwest mixup

My wife aka Mrs Claus bought me a kit from midwest. It included an extract ingredient kit which she requested a substitution on since they didn't have what I want with the "kit". Well even though the packing slip clearly stated to sub in a cream ale kit, they shipped an Irish Red Ale kit...

Newbie with 2 questions (late extract / bottle reuse)

I've been lurking for a while and decided to post. I've never brewed anything before. I've asked "Santa" for a brewkit from Midwest Supplies, the one that comes with basically everything http://new.midwestsupplies.com/everything-a-carboy-complete-brewing-package-equipment-kit-2.html My...
