    Maize questions.

    After mashing my third batch this weekend I thought it appropriate to ask about Maize usage even though its too late. LOL. I just through my maize in with the grain when I mashed. Did I do it right? Or should I hae waited to the boil to insert maize?

    Krausen ?

    How much Krausen is a good indicator that the yeast is getting the job done? I have 3 gals in a 5 gal bucket with about 1/4 inch of Krausen. I noticed some other pictures with much more. Am I bad off here or will it turn out ok?

    Head Space

    I brewed about 3 gallons and poured it into my fermenter. I had little activity in the airlock but took a peak and saw alot of krausen. Originally I had put 3 gals of wort into a 5 gallon bucket. Will the excess headspace in the bucket effect my fermentation?
