    It sounds like your fermentation was going fine. Give the yeast some time to finish doing it's thing and check your FG when it's closer to bottling time.

    Good analogy!! Anyway, I have never done a kit beer but I seem to recall Charlie Papazian saying something like you should always boil (even the no boil kits).

    White Labs only recommend making a starer if the gravity is over 1.070 or past it's expiration date.

    oxiclean free vs. oxiclean versatile?

    I use the oxy verisitle, with a dishwasher rinse (no soap or jet dry), and then star san. I've had no problems.

    I've had luck with steeping about 1/2 lb of (freshly ground) coffee at flame out for about 5-10 minutes.

    Labels and coasters?

    Check you LHBS or Staples for "Dried Gummed Label Paper". You print to it, cut your labels, wet you bottle and stick. It's fairly easy to apply and remove.
