    You could probably add those essences at bottling time or even in individual bottles. If the oils are volatile they could lose some of their flavour if added during fermentation or conditioning.

    Just pitched with this lot number a couple of hours ago. We'll see how it turns out but I'm not worried. Btw, my sachet says made in Austria. Usually marks made in Denmark. Maybe they're marked differently for the American market. Or they only send the bad ones for BeerNoob. ;p

    Question About Baking Yeast.

    One of the reasons this forum rocks. Manku007: if you can purchase barley or wheat, you can malt it yourself. Once malted, you can always roast some for a little more character.

    Freshness of crushed grain?

    I usually get upwards of 60lbs malt crushed when I buy from my LHBS. There are great advantages to buying in bulk there and I don't have a crusher yet. Malt sitting in sealed plastic bags for weeks at a time hasn't given me or my brewing buddies any off tastes.
