I now mash, lauter and boil after the kids go to bed. I cover and place the kettle in the garage and let it cool overnight. The next day, I rack to the primary, pitch the yeast and clean up.
Ended up brewing a scaled down version of this last night with a few minor adjustments. :mug:

1.5 lb Victory malt
1 lb Lactose
1.25 lb flaked oats
1.0 lb crystal 120
.75 lb Chocolate malt
3 oz Black Barley
3 oz Carafa III
3 oz Challenger 60 min

Typically, it takes two weeks for postal mail to travel from Charlotte NC to Montreal QC. I believe there's still a black log of mail that needs to be processed due to the Canadian Postal strike.

Typically I follow this rule of thumb;
Jan-Mar - Lagers & UK Ales
April -May - APAs, IPAs, Hefes, Summer Ales
Jun-Sept - not a lot since it's hot as hell in the south
Oct -Dec - Heavy dark ales
