I have no idea which one goes against the ridges, but it's 50 plates - it's going to chill the eff out of your wort no matter what. My sticker had no such markings. I've done In-1/Out-3 and In-3/Out-1 and In-2/Out-4 and In-4/Out-2 - they all cooled the wort down seriously quick.
