ok so swell first, then put 180' water in, then bourbon. Also the bourbon used in these barrels is pretty expensive, but they also sell a white dog. I guess that would suck some char and flavor out not add to it. thanks for the notes.

I just racked mine into a keg. its 3 weeks in the fermenter primary/secondary with 8oz cherry concentrate, 3 lindt chocolate bars and a vanilla bean. Its tasting good but I am not sure the additional gravity added by the cherry concentrate. any ideas?

So it sounds like to general strategies so far: debittered black, and adding a small amount of dark malt at the end of the mash. This beer was black... I brew a brown thats good and brown but this sucker was BLACK. So I will have to try both options and see what comes of it
