    F First time making it. 3gallon batch. Added 12 halved jalapeno in primary and could taste both pepper flavor and heat. Will taste at racking into secondary and add more if necessary.

    Haven't posted for months. Just moved and could not really concentrate on wine and cider for 6 months. Left behind my orchard and will be using bottle apple instead of home grown. Have access to lots of fresh peaches. Making up for lost time

    Not an alcoholic lol. Just like to entertain. In addition to the 23gal of cider made 25 gal of wine. I have 5 taps on co2 in a keezer For sparkling wine and cider plus 2 taps on argon for still wine. Had 10 folks over Sat for a tasting party.

    The pineapple I made had way too much pineapple and I also did not take OG. Alcohol level was stupid high and almost ruined it. Stabilizing and blending in more apple made it drinkable and taught me a lot. I seem to learn more from mistakes.

    I set the target temp at 40. Put both wines on tap today. The ciders and sparkling wine get kegged next week. Slow carbonated in time for Thanksgiving.

    Cider has no flavor???

    Just popped the first of my 32oz apple cider that was primed last week. It was ok before back sweetened, but a little simple sugar really makes the apple 🍎 flavor jump. Another week and the carbonation should be perfect. Have 40 bottles to enjoy this year.

    something floating on my cider

    I racked off 6 gallons plus 95grams of priming sugar into 32oz swing top bottles a week ago. I was very happy with aroma, clarity, and taste when it was bottled but this is my first batch and am worried now.
