I always use Irish Moss - does that count? :)

@bkboiler @Northern_Brewer you guys rule. I'm backed up on another couple of brews for a while, but when I get to it I'll take inspiration from what you have posted.

I know y'all can help me with some ideas for a novel beer. I have a group of friends from the five nations mentioned above. One day we will party. I will bring the beer. Any ideas? BTW I don't want to limit the creativity of this awesome forum, but I don't have a fermenting fridge, so no cold...

    First attempt at Kolsch

What a beer! My neighbour and chief taster says it's the best lager style beer he has tasted. Thanks to all on this thread for guiding me though. Kudos in particular to @VikeMan for frequent tips.

    First attempt at Kolsch

Next Q: I cold crashed and left for 8 days or so. The fermenter cleared enough for me to bottle. I have added sugar for carbonation. I would normally leave at 20'C/68'F for a week or so for carbonation to occur - do I need to do this with Kolsch before I then lager for a few weeks? Or shall I...

    First attempt at Kolsch

Thanks @VikeMan that's a great level-up on my brewing journey. Correction: I use 2.5g/0.1oz in my Anglo-American Pale Ales which definitely wont be lively enough for Kolsch.

    First attempt at Kolsch

Update and question - so far so good. 3 days at 17C/62F. 3 days at 18C/64F. 1 week so far at 20C/68F. Fermentation was brisk and has now stopped. Will leave for another week in the primary and then bottle for 4 week lagering. Question - For Kolsch do I prime bottles as per normal ale. I usually...

British Golden Ale Hoppy New Year

Thanks @SBaker - Yep, my experimental intent was to just get bitterness from the Citra without the flavour, it worked. I do like to make a SMaSH with just loads of Citra including 100g dry hopping, its immense!

    iSpindle - DIY Electronic Hydrometer

First - thanks Joey Joe Joe jr, your ispindel webpages are excellent. Second - awful. My 25W 35 yr old soldering iron is just about shot and fluctuates wildly in temperature. The solder quality is rubbish and I probably killed something. I got a new soldering iron. I'll order new parts and have...

    iSpindle - DIY Electronic Hydrometer

@ChrisThomas a bit of a mish-mash. Some looks OK (not that I would know) but lots of "Acc Test Connection ERROR!" The main chip is mildly warm to the touch (not hot) but certainly consuming some energy. Blue LED is faintly on. ---- PuTTY start ------- FW 6.3.1 2.2.2-dev(38a443e) Worker run...

British Golden Ale Hoppy New Year

Lots of folks here post their accidental successes - here's mine. It's super easy, I was essentially using up leftovers before putting a new order into my supplier. Made mid-December so wife suggested "Hoppy New Year". Not sure if it qualifies as a British Golden Ale on account of the Citra, but...

    First attempt at Kolsch

Thanks @hottpeper13 My OG was 1046, I have just used a standard airlock - I'll keep checking it, if it looks feisty I'll change out. I'm going to follow your fermenting temp profile. I don't have a keg or a fridge big enough, so I'll bottle at 21 days and lager like that. I'll have to rely on...

I spent some time in CO a few years ago. I would tell folks back home that there was one microbrewery per person in the state!

    First attempt at Kolsch

Too true @VikeMan , I think I need to relax. People tell me I make good beer - I guess I don't want my batting average to suffer :)

    First attempt at Kolsch

Sorry, I'm not being very clear. Sharp/sour, is the best way I could describe it. I didn't taste it but I imagine it would have been yuk on the sides of my tongue. Remembering smells is quite hard it turns out. Prompted by your Q I went out the garage, er, brewhouse to check. The airlock was...

    First attempt at Kolsch

Kinda 'off' but not offensively so - it wasn't the usual bready/beery yeast smell, a bit more like the smell you get from a failed brew. I haven't used Kolsch before so I wondering that was normal for that strain.

Quite right - in fact my renewed interest has stimulated him to get his old gear out and he's made a couple of kit beers. Happy days.
