    Slanting yeast

Yes. Good post. I started making slants again yesterday and will post some of my thoughts, questions, and pictures soon. Plus I haven't read all the posts yet...because I'm busy in the brew room again making mini starters to support my future yeast civilization! I made a test tube slant holder...

    mash ratio question

I use a SS kettle w/ faulse bottom for my mash tun and I have to add 1.25 gal (5 qts) in addition to mash water requirement to fill the "dead" space below the false bottom. So if I have 13 lbs of grain which requires 4 gal of water my total water required is 5.25 gal. (21 qts).

the yeast cake, oh my the yeast cake.

Update - I racked both batches the other day and they turned out wonderful. The yeast cake batch came out much stronger @ 6.58% Alc. The OG = 1.054, FG = 1.004. The batch using the starter smack pack is @ 4.73% Alc. OG = 1.046, FG = 1.010. I have kept the yeast cake and split it up this time...

the yeast cake, oh my the yeast cake.

I brewed (2) 5 gal batches yesterday. One batch using a 1056 American yeast pack and the other using yeast cake of the same strain collected from my plastic conical with the same recipe. I never pitched a yeast cake before so I thought I would at least have one successful brew. I collected (1)...

    alcohol content

A higher grain bill is the better way to go, however, 1/2 lb DME = 1 lb extract from grain. 2/3 lb DME in 5 gal batch increases original gravity by about .008 or 2 Plato. (My notes say 1/3 DME in a 2.5 gal batch = .004 or 1 Plato) Ballance is key.

    Milwaukee, Wisconsin August 14th, 2009

After reading this post I'm throwing around the idea of making a trip to Milwaukee to this fest. I live in PA but grew up in Wales, WI & Milwaukee and have the need to visit home. I can't think of a better reason to go to Wisconsin - Beer fest, Not relatives!

Aging beer: Facts, myths, and discussion

Three reasons why I go to a secondary otherwise I leave it alone: - Free up my conical fermentator. - If the beer is waiting too long in the primary so as not to catch off flavors from the trub. - I’m going to re-pitch the yeast slurry from my conical. Isn't kegging from the...

    using O2 to aerate

Wow thanks. I have been using pure O2 through a stainless air stone as well from a hospitable grade tank w/reg and I was just wondering how long to aerate. However, I may have been over oxygenating by letting it go for a little long but not to long because it starts to foam and I didn’t...

    rough brew day

I made a started for some sweet water I brewed on Monday and noticed a frickn' dog hair in the bottle of yeast!!! " What the hell!!! How did that happen? Everything was well sanitized and the yeast seemed fine so I ran with it after considering tossing it. We're calling it Wild Dog Hair Ale. The...

    Promash question

I added extra water to my mash but I don't see it in ProMAsh in the Mash Designer window. Last week when I used my new mash tun I noticed there wasn't enough water and wondered how much was sitting below the false bottom. Turned out to be 5 qts so that's what I started with. Total water added to...

    Promash question

Thanks! I figured as much and am doing it right now. I didn't get to brew yesterday so I'm doing it tonight. Sweet Water IPA.

    Promash question

Do I add extra water to my mash tun to compensate for the false bottom? Seems when I add in the right amount of water I'm not getting total absorption because 5 quarts is sitting below the faulse bottom.
