    I had planned on leaving in primary the whole time, just wasn't sure as to when to add the fruit puree. I want to make sure the sugars in the puree still get eaten up

    Im doing a sour kit and the instructions spell out primary fermentation should be approx. 1 week, then secondary fermentation with the fruit puree should be started. My cap has already fallen and airlock activity has slowed after only three days. Gravity readings are at present 1.011 down...

    So, I'm having a brain fart. Recipe calls for 1-2 weeks in fermenter then 1-2 weeks bottle conditioned. As I'm not bottling, whats the process? Can I just Keg and carbonate as soon as fermentation is done? TIA

    Yeasty flavors

    Basement temps low 60's and it was the packet yeast that each kit came with. One was a porter and the other a blonde stout....Ive made other beer kits with out the yeastiness....yes I try to leave as much trub when racking and leave sediment in bottle.

    I added some fresh frozen fruit to my secondary fermentation, its been 10 days still with a bubbling airlock. Seems at times its real slow, Its not a constant bubble every 10-15 seconds kind of action. Sometimes it's like minutes befor I see it burp. I was expecting to be able to bottle by now...
