    Crystal Hops

Would Hallertau be an ok substitute for crystal hops? It is just a small part of an overpowering dry hop bill that includes simcoe and cenntenial, so I'm not sure how much it will really matter - except that I don't want to buy any crystal hops.

Pliney vs. The Maharaja vs. Blue Dot

I had all three last night, on tap, in snifters. The Avery Maharaja had a beautiful head and so did the Pliney, the Blue Dot not so much. They were all good, all very strong and hoppy. The Maharaja was the most strikingly bitter, the Blue Dot was the most alcohol forward with a slight...

    Cascade Golden Promise SMaSH

I did a Simcoe Golden Promise SMaSH here: https://www.homebrewtalk.com/f12/simcoe-golden-promise-smash-138222/index2.html Now I am going to do a Cascade version so I can do a side-by-side comparison. I originally thought I would use Centennial but the wife voted for Cascade after some of...

    2009 Dechutes Jubelale

The Jubelale is out and it's really good. I think I had better make something like it before I blow all the money I just saved on hops. I did a search and found this, but am wondering if this is the best clone recipe or if someone knows better: Jubelale A ProMash Brewing Session -...

    Wee Heavy using Edinburgh

I brewed a wee heavy about 10 days ago and used White Labs Edinburgh which I haven't used before. I started out at about 1.100 OG and I got crazy fermentation for about 3-4 days and now the yeast has settled down into a sort of very slowly moving blob-like creature that lives just below a...

    Substitute for Fuggles

I used 4oz of Fuggles in a 5gal batch of Porter a while back that turned out well. What else could I use in place of Fuggles that would be good in Porter? Right now I have Centennial, Amarillo, Columbus, Magnum, Symcoe and Hallertau (GR).

    Aged Oatmeal Stout

I am not sure if this is the place for this thread I have an 7% oatmeal stout that I brewed last December and I saved a 5.5 gal keg over the Spring and Summer. I tasted it a while back just to see how it was doing and it was really wonderful with vanilla notes. So anyway, I am itching to drink...

My Wee Heavy Farted on the Ceiling

On Monday night I brewed a 6 gallon batch of Scottish Wee Heavy and had an amazingly good session that ended up with a final gravity of 1.098 and I was totally stoked when I pitched the Edinburgh yeast. It started activity at around 12 hours and by 24 hours (last night) it blew its stack and...

    The Greatest Pilsner Recipe

Well first I have to say I'm an ale guy and I like it hoppy. My favorite hops are Simcoe and Amarillo. In fact I just finished brewing two fresh hop beers, one red and one IPA, that each had about 4lbs of fresh hops in the boil. It was alot of fun and am really looking forward to sharing it with...

The tastiest foam I ever poured

So I kegged my batch on Monday and I spent a few minutes with it at 30 psi shaking it up and stuff, then I let it sit for a few days at 12 psi and today I tapped it. It poured foam so I turned down the pressure to about 5 psi and poured a pitcher and drank off of that and pretty soon my wife and...

The best way to fill a Cornelius keg

I know this has probably been asked 100 times. But I have searched and cannot find a good primer on kegging. This weekend I will keg my first 10 gallon AG batch and I really don't want to screw it up. I have two kegs and all of the parts and I have figured out how to disassemble, clean and...

I need some suggestions on dry hopping

So I am about to go into my secondaries with 10 gallons of my big IPA. I bought 2oz of Amarillo and 2oz of Simcoe. Both are loose hops. I was thinking of doing the dry hop in two additions separated by a week. 1oz into each carboy the first week, and 1oz into each carboy the second week. I am...
